After full destemming, the grapes macerate for a week before fermenting in temperature-controlled stainless steel tanks over seven days, with gentle punch-downs performed daily. The wine is then racked into cement tanks and allowed to rest for five months, followed by light fining, filtration, and minimal sulfur addition to preserve freshness and character.

Hérisson Rouge opens with generous notes of ripe cherry, plum, and blackberry, complemented by subtle spice and earthy undertones. Its smooth texture and balanced acidity make it endlessly drinkable—perfect with casual fare like grilled meats, pizza, or charcuterie.
